Soak Black and Golden Raisins in Water for 10 mins.

Boil the soaked Raisins.

Add Clove, Cinnamon Stick, and Star Anise.

Boil until the visible water has evaporated.

Remove the whole spices and blend the remaining into a coarse paste.

In a pan, cook further until the remaining water has evaporated leaving behind a sticky jam.

Store chilled.

In a pan, boil Honey and Cinnamon Stick with Water. Turn the heat off and let the mixture steep for 1 hour.

Remove the Cinnamon Stick before serving.

In a bowl, add Whole Wheat Flour, Baking Powder, Salt and Lemon Zest. Mix together.

In another bowl, add Curd, Soda Water, Honey and Milk. Mix together.

While whisking the liquid ingredients, slowly keep adding the dry ingredients to the mixture. Mix into a smooth batter.

Add Ricotta Cheese in granular form and gently add into the mixture.

On a heated griddle, add one portion Pancake batter.

Flip it once one side gets cooked. Cook the other side.

Place the cooked Pancake on a flat surface.

Apply Raisin Jam.

Place the other Pancake on top and form a stack.

Garnish with Almond slivers, Pomegranate pearls and Mint sprig. Serve with Cinnamon Honey.
