In a bowl, combine whole wheat flour, jaggery powder, baking powder, baking soda, and salt.

In another bowl, whisk to combine the curd, milk, egg yolk and oil. Whisk and set aside.

In a separate bowl, whisk the egg white and set aside.

Whisk the yolk mixture into the dry, and stir until just barely mixed. Fold in the whisked egg white, using the cut and fold method. Do not overmix, there will be plenty of lumps, if you stir out the lumps, the pancake will likely be tough.

Heat a non-stick pan, brush a little oil. Pour a spoonful of batter and spread it with the back of the spoon. Let it cook for 2-3 min.
