Preheat the oven at 180-degree c. Lightly grease the baking tray and line with a parchment/ baking paper; oil will help to stick the paper to the tray or line a foil on the baking tray. Scrub and wash the potato. Use a mandolin or knife to slice the potato as thin as possible keeping the same thickness of all the chips.

Put the potato slices in salt water for 6-7 min, remove and pat dry with a kitchen towel / tissue paper.

In a bowl, combine olive oil, salt, and black pepper powder. Toss the potato chips and coat it.

Spread a single layer of chips on the prepared baking tray. Do not overlap, space them evenly.

Bake the chips at 180 degrees c for 15-20 min, depending on thickness. Turnover halfway through and remove any chips that are done before time. Once done, let it cool down and enjoy it.
