Directions

Wash and cut the chicken into dices and set a side.

Clean and cut the pineapple and red bell pepper into dices and set aside.

In a bowl, combine chicken, red capsicum, chilli flakes, pineapple salt, pepper, a little oil and chopped parsley. Mix well and let it marinate for 1 hour.

Heat the pan or a grill, brush with little oil. Take a skewer and place the red bell pepper, then chicken dices, then pineapple dice and repeat. Each skewer will have two bell pepper dices, two chicken dices and two pineapple dices

Place the skewer on a hot pan. Cook the chicken and let the pineapple caramelize. Brush a little oil if required.

Garnish with fresh chopped parsley and serve hot.
