Remove the cauliflower steam and cut it into small florets. Soak the florets in salted water, rinse and drain it. Chop the onion, celery, garlic, parsley, and set aside.

Take a pot and heat. Add oil and chopped garlic. Saute till golden. Then add onion, celery. Saute lightly for 2 minutes until the onion turns soft. Add cauliflower toss to combine.

Add veg stock and salt to taste, close the lid. Let it boil and cook for 5-10 min

Cook until cauliflower is soft. Place the cooked mixture in a bowl and cool down.

Puree the soup using a blender or mixing jar. (Do not puree in a blender when the soup base is hot, it might blow up all over). The puree should be very smooth in consistency.

Put the puree in a pot along with milk, nutmeg, black pepper and stir and cook until smooth. Add salt accordingly to taste.

Let the soup simmer for 2 to 3 minutes. garnish with chopped parsley and serve hot.
