Preheat oven at 180-degree c. Take the ripe banana, peel, and cut into pieces. Place pieces in a bowl

Add jaggery powder and mash the banana with the back of a spoon till the jaggery dissolves.

Once the banana is completely mashed, add oil. Mix well.

In a separate bowl sieve the whole wheat flour, baking powder, baking soda, and salt, also add half of the seed mix/walnuts.

Fold the dry ingredients to the banana puree. Do not over mix. add the flour-coated walnuts/ seed mix and gently fold in.

Transfer the batter into a greased cake tin or bread tin. Fill 3/4 of the mold leaving some space as the bread will rise while baking.

Tap the mold twice to remove the incorporated air. Sprinkle the remaining seed mix/ walnuts on top and gently press it in the batter.

Bake the banana bread at 180c for 20-25 min. Insert a toothpick or knife in the center, if it comes clean then the banana bread is done. If required then bake further for 4-5 min. Allow it to cool down completely in the tin. Remove it and cut it into slices. Serve with tea or coffee.
