Peel the onion, carrot, and garlic. Roughly chop and keep it aside.

Wash the chicken carcass properly under running water.

In a saucepan, add chicken carcass and water enough to cover the bones. Bring it to a boil and discard all the water. This is done to remove impurities.

Add the bones to a clean saucepan. then add the veggies and water. Water should be at least an inch above the bones and vegetables. Bring it to a boil, then reduce the heat to a minimum and allow it to simmer for half an hour.

Add all the spices and let it simmer on low flame for 40-45 min. Once it is cooked and reduced to half. Turn off the flame, strain it, and let it cool down. Discard the chicken, veggies, and spices. Keep it in a refrigerator and use as required.
