Peel the onion and cut the root and stem. wash it and set aside. Wash and peel the beetroot. Cut into small dice. In a saucepan, boil water along with bay leaf and peppercorn. As it starts boiling turn off the flame.

Transfer to a bowl, add vinegar and jaggery. Mix well.

Add beetroot and onion to the mixture, cover it and let it rest for 3-4 hours.

As the onion turns red in color, it is ready to use. Store in an airtight container in the refrigerator upto 1 week.
