Directions

1In a bowl, add Water, Chickpeas and keep aside for soaking.
2In a heavy bottom vessel, add Water, soaked Chickpeas and bring to boil.
3In a heavy bottom vessel, add Water, Spinach and bring to boil. Drain the Water and take out the Spinach to a flat surface and chop it roughly.
4Take a heavy bottom vessel, add Water and batons shape Baby Corn bring to boil.
5Take a baking tray, add the roughly cut Red Pepper, Green Pepper, Salt and Black Pepper and place it in a oven for roasting.
6Take out to a blender and add chopped Garlic, Bechamel Sauce and make a smooth paste.
7Take out in a bowl and keep aside for later use.
8Heat Oil in a pan and add Spinach, Garlic, Thyme, Salt and Saute.
9In a bowl, add Sauteed Spinach, diced Paneer, Bechamel Sauce and Pepper.
10Mix well and keep aside.
11In a bowl, add batons shape Green Zucchini, Green Capsicum, boiled Baby Corn, Oil, Salt, Pepper, Chilli Flakes, Oregano and toss well.
12Take a baking tray, place the above vegetables and place it in an oven for roasting.
13Remove to a plate and keep aside.
14Take a blender, add boiled Chickpeas, Olive Oil, Garlic, Tahina, roasted Cumin Powder, Oregano, Lemon Juice, Water and make a paste.
15Remove to a bowl and keep aside.
16In a bowl, add Cherry Tomatoes, Tomato, Garlic, Oregano, Oil, Salt and toss properly.
17Take a baking tray, place the above marinated tomato and place in an oven for roasting.
18Take out in a bowl, lightly mash the roasted tomato and keep aside.
19Cut the bread in half and spread the Cherry Tomato Spread on 1 slice and Hummus on another slice.
20Place the Spinach Paneer Mix over the Hummus.
21Top up with the Roasted Veg.
22Close with the other Panini slice and grill in a sandwich grill.
23Take out to a plate and serve with Roasted Pepper Dip.
