Directions

In a bowl, add Water, Salt, Paneer and keep aside for 2 hrs brining.

In a bowl, add Water, Brown Rice and keep aside for 45 mins soaking.

In a heavy bottom vessel, add Water, Rice, Salt and bring to boil. Cook till soft then strain the rice and keep aside.

In a heavy bottom vessel, add Water, Salt, diamond shaped Carrot, Beans, Baby Corn and bring to boil.

In a heavy bottom vessel, add Green Zucchini, Yellow Zucchini and bring to boil.

In a baking tray, add Peanuts and place in an oven for roasting and remove the skin and set aside.

Heat a pan, add Sesame Seeds, Pumpkin Seeds, Sunflower Seeds and toast properly.

Remove to a bowl and add above roasted deskin peanut. Toss well.

Keep aside for later use.

Mince the Garlic and toss with Oil. Take a roasting tray spread the garlic and place in a oven for 30 mins at 150 degrees. Then remove garlic and once cool, chopped till it resemble fine granules.

Heat Oil in a pan. Add chopped Onion, Celery, Leek, Carrot, Garlic, fresh Thyme and saute till all moisture dried up and vegetables are soft.

In a blender, add Jaggery, Paprika, Pepper, Chilli Powder, Roasted Garlic and grind using short bursts. The spice mix should be course powder not fine and keep aside.

Heat a pan, add Pepper trimmings, Red Chilli, diced Onion, Pineapple, Dark Soy Sauce, Chipotle Tabasco, Paprika, Water, Garlic, Salt and allow to simmer for 1 hr.

Heat Oil in a pan and fry the Paneer on medium heat on both sides till golden and crispy.
