Chop the onion, green chilli and set aside. Remove all greens. Cut cauliflower into florets and soak in salt water for half an hour. Check for worms. Drain and thoroughly dry.

If using a food processor, cut the cauliflower into small florets and use the grater attachment to grate the same.

Squeeze the cauliflower to remove all the liquid, spread it over a paper to remove the excess moisture.

Heat oil in a pan, add chana dal, saute it till it turns a golden color. Once it turns a golden color, add mustard seeds & hing, saute it well. Add chopped onion, turmeric powder and saute it till translucent and till turmeric cooks through.

Add chop green chili, curry leaf, and cook well. Add cauliflower, salt and mix well. cover it with a lid and cook for 5-6 minutes or till it cooks through. It should have a bite of cooked rice and shouldn't be mashed. Once it is cooked, squeeze 1 whole lemon and check seasoning. Serve hot.
