As you go down the streets on a rickshaw, the aromatic smell of Amritsar Kulcha will catch your attention. Crunchy on the outside and soft on the inside, the Kulcha is an Indian flatbread that is baked in a tandoor and served hot. Usually, it's stuffed with a filling made from potatoes, paneer, pesto o ... r of some sort but we've taken the liberty to reinvent it and come up with this amazing Kulcha Pizza recipe. King Shah Jahan's royal chef was the one who thought of making Kulchas. When he presented the king his creation, His Majesty loved it so much that he made it a breakfast staple. Although most Kulchas use all-purpose flour (maida) for baking, we suggest using coconut flour for our Kulcha pizza recipe if you want it to be gluten-free. What if you're craving Indian and American food both at the same time? That's what our Kulcha Pizza restaurant-style homemade meal addresses. Loaded with luscious gooey cheese, pizza sauce and a medley of colourful vegetables, you get the best of both worlds with every bite. Combine 1/4 cup of luke warm water, jaggery and yeast in a large bowl, cover the bowl and allow it to rest for 6-8 minutes.

Mix flour and salt in a bowl so that it is evenly incorporated. Add the activated yeast mix.

Mix with a spoon or spatula and knead to make a dough. If the dough seems too dry add a little water.

Once the dough is ready, brush few drops of oil over it and cover with a wet kitchen towel and set it aside for an hour. After the dough has rested, you would notice an increase in volume of the dough.

Now, divide the dough into 8 equal size balls. Cover it with a wet cloth and set aside. Preheat the oven at 220 degrees. Dice the onion, capsicum, broccoli and slice the mushrooms. Set these aside.

Take a dough ball and press it down lightly to form a round shaped disc. Prick the dough with a fork .

Put 1 tablespoon of tomato sauce on top of the kulcha and spread it all over evenly .

Top with the chopped vegetables and cheese or grated paneer .

Place the kulcha on a greased baking tray and bake it at 220 degree c for 5 min.

Serve hot.
