What is Phirni?
Phirni is an Indian dessert made using rice and milk that also has other versions known as the payasam and kheer. But a mango phirni involves mango puree along with sugar that makes the Indian pudding thick and creamy. The fruity touch of a phirni is highly available during the summers to be consumed in a new form. And one can make a phirni recipe from canned mango puree during the other times of the year. A mango phirni can be made in advance and stored in a refrigerator for two days.
Origin
Phirni is believed to be from the Middle East or ancient Persia, and the credit goes to the Mughals for inventing them. The milk-based dessert, i.e., the firni recipe, became famous because of the flavour of the nutty, rich and aromatic rice pudding. Moreover, the rice phirni was always made in earthen bowls previously as their legacy. A rice pudding is the basic recipe of a phirni, and it was introduced by Romans in Europe in the 17th century to cure all stomach ailments and digestion problems. In China, phirni was called the eight jewel rice pudding. The phirni ingredients here incorporate various exotic fruits with honey, namely cherries, jujubes, winter melon, lychee, almonds, and walnuts.
Tips & Tricks
The tips and tricks while preparing a firni are minimal and they include: 1. Make use of only thick or whole cream milk to prepare firni to get the best consistency. 2. Add more crushed almonds to make the firni creamier and richer. 3. To accentuate the sweetness of the firni, try to incorporate more sugar into it. 4. Soak the rice for 30 minutes before blending it to form a coarse paste while preparing the firni. 5. Always refrigerate the phirni recipe for a few hours before serving to make it taste better. 6. Do not refrigerate the mango phirni recipe as it will split while thawing them. 7. Serve the rice phirni recipe in earthen pots to impart a rustic and raw smell of these pots onto them. That amazingly blends well with a phirni recipe with rice flour and also looks very attractive in it.
