You would definitely remember having it with Rotis or even rice as your mom or Grandmother would make it with so much love and affection and bottle them up in huge pickle jars. Extremely easy to make, this lip smacking Nimbu Ka Achaar rec ... ipe only requires about 20 minutes of your time and can serve up to 6 people. In case, you wish to make more of it and store it for later, you can do so by scaling up all the ingredients proportionally. If stored properly in an airtight container, this pickle can easily last for months. We have slightly modified the traditional recipe to make it healthier without losing out on any of the heartiness of the dish. This Nimbu Ka Achaar recipe does not contain any sugar as it uses its healthier alternative - jaggery and uses only 2 teaspoons of Mustard oil, making it as healthy as it possibly can be. Spiced with Red Chilli powder, Asafoetida and Panch Phoran masala, this pickle balances spice and other flavours perfectly without letting it overpower the other flavours. Directions

Boil water and place lemon in it. Switch off the flame. Leave the lemon in the hot water for 5 to 10 min

Drain and dry lemon. Cut each into 8 pcs. Powder 1 tablespoon panch phoran masala

Add all the powdered spices, including panch phoran powder (except turmeric and hing), salt and jaggery. Mix and keep aside (keep 1 teaspoon whole panch phoran masala aside)

Add mustard oil in a pan and heat till it smokes. Switch of the flame. Add panch phoran masala, turmeric and hing. Add this spice tadka to the lemon and mix well

Store in a clean, airtight container
