Directions

1In a bowl, add Water, Salt, Paneer and keep aside 2 hrs for soaking.
2In a heavy bottom vessel, add Water, Kashmiri Rajma and cook till soft. Drain the water and preserve the water in a bowl.
3In a heavy bottom vessel, add Water, chopped Spinach and blanch. Strain the Spinach, remove to a ice water and keep aside.
4Heat Oil in a pan. Fry Paneer on both the side till Golden and Crispy.
5In a blender, add Basil, Walnut, Water, Garlic, Olive Oil, Salt, Pepper. Make a paste.
6Remove to a bowl and keep aside for later use.
7In a bowl, add Atta, Salt, Water and make a dough.
8Add Oil and knead the dough.
9Keep aside.
10Take a portion of dough and make a flat circle. Heat a pan and cook the wrap on both the sides.
11In a pan, add chopped Tomatoes, Coriander, Chipotle Powder and cook till mushy.
12Remove to a bowl and keep aside for later use.
13In a bowl, add Whole Wheat Flour, Salt, Water, Oil, chopped Coriander, minced Jalapeño, minced Green Chilli. Knead to make a dough.
14Take a portion of the dough and make a flat circle.
15Cut the Flatten dough into diamond shape. Put in a baking tray and place in an oven for 8 min at 160 degree C.
16Remove to a bowl and keep aside.
17Heat Oil in a pan. Add Garlic, Onion and saute until Golden Brown.
18Add Tomatoes, Topping, chopped Jalapeño, Chipotle Tabasco, Paprika Powder, Cumin Powder and saute.
19Add boiled Beans and half of the water. Cook till water is absorbed.
20Add remaining Water and cook in low flame till beans are partly mashed.
21Add Salt, Pepper, Topping and cook.
22Remove to a bowl and keep aside.
23Heat Oil in a pan. Add minced Garlic, Thyme and saute.
24Add chopped Spinach and Sauté.
25Remove to a bowl and keep aside.
26In a bowl, add grated Cucumber, Salt and keep aside for 15 mins and squeeze out the water.
27Take a blender, add Curd, Garlic and crush lightly.
28Strain out the Garlic Juice into a mixing bowl. Add Curd, Salt, minced Mint, Parsley, grated Cucumber and whisk till smooth.
29Remove to a serving bowl and keep aside.
30Take the wrap on a flat surface.
31Spread the Basil Pesto on the wrap.
32Place the sauteed Spinach and grilled Cottage Cheese on the top.
33Put Feta Cheese on top.
34Roll properly, cut into half and serve with Tzatziki, Mexican Bean Dip and Coriander Jalapeño Chips.
