Directions

Fine chop the green chilli and ginger. grate the carrot. Set aside Heat ghee in a pan and add mustard, cumin, chana dal. Saute until the dal turns golden. Reduce the flame and add curry leaves, chopped green chilli, chopped ginger. Saute till fragrant. Add rava and mix well. Roast on a low flame mixing continuously until the rava turns aromatic. Set aside.

When the rava cools down completely, add salt, chopped coriander, curd and 1/2 cup water. Mix well until a thick batter is formed. Cover and set aside for 30 minutes. Bring water to a boil in a steamer.

Grease the moulds. Sprinkle some grated carrots and set aside. The batter has to be thick like regular idli batter and must be smooth.

Add fruit salt, chopped green beans, and dill leaves. Gently give it a mix to combine. The batter needs to be steamed immediately otherwise the rava idli will not turn fluffy and soft.

Pour the batter into the greased mould. Steam for 10-12 minutes on a high flame.

Once the idli is cooked allow it to cool down for about 3-4 minutes and demould them.

How to Make Rava Idli?
Suji Ki Idli Recipe: Ingredients 2 tbsp Vegetable Oil ½ tsp Mustard Seeds ½ tsp Cumin Seeds 10-12 Curry Leaves ¼ tsp Hing 1 tsp Chana Dal 1 tsp finely chopped Ginger 1 tsp Green Chillies 1 Dry Red Chilli 4-5 Cashew Nuts (crushed) 1 cup Rava ½ cup Yogurt 2 tbsp Carrot (shredded) Salt 1 tsp Fruit Salt Cooking Instructions The whole process of suji ki idli takes more than just adding the batter. We have divided this rava idli recipe into three sections. Read and follow: Frying and Roasting Rava First, take a pan and heat 2 tablespoons ghee. The heat should be low to medium. Once the ghee is hot, add the crushed cashews and sauté till golden. Transfer the sauteed cashews. In the same ghee, add mustard seeds. When they begin to splutter, add 1 tsp of chana dal. Fry the dal till they are golden and crunchy. Now. Add cumin seeds and sauté for a few seconds. It is time to add the chopped curry leaves, finely chopped ginger, asafoetida, and green chillies. Mix the ingredients well and fry for 10 seconds. Finally, add rava (cream of wheat, suji, semolina). Combine and stir till the rava becomes aromatic and changes its colour a bit. Make sure you do not over-roast to make it golden or brown. This process of roasting will take somewhere around 5-7 minutes. Keep stirring to ensure the rava grains look separate. Once the roasting is done, switch off the heat and let the rava become warm.
