Grate Louki and soak in water.

Soak Sabudana for 1 hour.

In a pan, add Water, grated squeezed Lauki and Jaggery. Cook it.

Cook until transparent texture appears.

In a separate pan, boil Milk with Rose Water, Bay Leaf and Green Cardamom.

Add soaked Sabudana and boil for 15-20 minutes.

Strain the Bay Leaf and Cardamom from the Milk and mix cooked Louki with it.

Remove to a bowl and garnish with Almond Slivers and Raisins. Allow to cool and then refrigerate. Serve cold.

Ingredients: Sabudana or Javvarisi: Extracted from the tapioca roots, Sabudana or Javvarisi is nothing but starch that is composed of carbohydrates. It is hard, round, and white, looking just like little pearls. They are the staple food in many countries and you can easily find them in the market. Milk: This is the ingredient that gives your Sabudane ki Kheer a rich and creamy texture. People usually prefer whole milk for Sabudana Kheer. If you are focused more on health, you can use skim or low-fat milk but you will have to compromise on the taste. As for the vegans, you can also use coconut milk or almond milk to turn your Sabudane ki Kheer into a vegan dessert.
