Directions

Take whole cauliflower, remove the leaves and carefully cut off the bottom stalk without removing too much of the core. You need the entire head intact for baking.

Dip the cauliflower in salted water for some time to remove worms. Rinse and pat dry it. Preheat the oven at 180-degree c.

In a bowl, combine all the spices, besan and ginger-garlic paste. Add salt to taste and mix well to foam a paste.

Flip the cauliflower upside down and pour most of the spice mixture down the core, shake it around so it reaches the center.

Then flip the cauliflower over and use a brush to rub the leftover spice paste all over the exterior for maximum flavour.

Place the cauliflower stalk side down on a baking tray. Bake it at 180 degrees c for 40-45 min or until a knife easily pierces the core. Once done, take out from the oven sprinkle some cumin powder, lemon juice, and chopped coriander. serve hot.
