Wash and boil Sweet Potato in Water

Peel and put in a blender for a smooth paste.

For Brown Onion- peel and slice Onion. Apply Oil and roast at 160 degree C for 30 mins.

For the dressing- mix Sweet Potato Paste, fresh Red Chilli, Synthetic Vinegar, Jaggery, Salad Oil, Garlic, Salt and Water in a blender. Blitz to a smooth mix.

For the grilled Chicken- marinate Chicken with chopped Garlic, Lemongrass, Galangal, fresh Red Chilli, Kaffir Lime Leaves, Coconut Milk Powder, Red Onion, Oil, Salt, Aromat Powder and Coriander.

Grill on a medium heat till cooked properly.

For the Salad – cut raw Mango, raw Papaya, Red Cabbage and Carrot into juliennes and place on a bed of lettuce.

Top it with julienne of Cucumber.

Blanch Haricot Beans and add to the bowl.

Add Cherry Tomatoes cut into halves. Strips of grilled Chicken, Mint, Spring Onion, Brown Onion, Coriander.
