Fine chop onion and cut the spinach in thick strips. Slice the mushroom. Cut the broccoli and cauliflower into small florets. Cut the tofu into dices. Set it aside. Blanch the cauliflower and broccoli florets in salt water. Set it aside

In a bowl, combine besan, water, salt, black salt, turmeric, black pepper, thyme, and 1 teaspoon of oil. Mix it well.

Heat oil in a pan, add onion and saute. Add all the veggies, tofu dices and saute well. Add salt and pepper to taste and set aside.

Pour batter in a greased pan.

Top up with sauteed tofu and veg. Preheat the oven at 160 degrees C. Bake the Frittata at 160 degrees C for 20 min. Insert a toothpick in the center to see if it comes out clean.

Take out from the oven, let it cool down a bit. Serve
