Directions

Take a cleaned Beetroot. Wrap it with Salt, Pepper, Oil in silver foil and put in a roasting tray and place in an oven for roasting at 180 degrees for 1 hr.

Once cool, cut into dices and keep aside.

In a heavy bottom vessel, add Water, diced Carrots, Salt and bring to boil till soft. Blanch it and keep aside.

In a heavy bottom vessel, add Water, Celery, Salt and bring to boil. Blanch and keep aside.

In a plate, add boiled Carrot, Celery, baked Beetroot and mix it well.

Remove it to a bowl and set aside.

Heat a pan, add Fennel, Bay Leaf, Thyme, Onion, Garlic, Celery, Leek, Carrot and saute.

Add Beetroot, sliced Red Cabbage and saute.

Add Water, Vinegar, Salt and cook for 15 minutes.

Take it out to a blender and blend till smooth.

Strain the liquid to a bowl and again blend the remaining of the strainer and strain the liquid again to a bowl.

Take a serving bowl and place the Veg Mix on base.

Pour the strained Soup on top.

Garnish with Dill Leaves and serve hot.
